Chocolate Spice Cake


This ...my birthday cake for me... 😊 . Do what makes you Happy on your Birthday .. and Roses do heighten the happiness..

Celebrations in our home calls for sweets like laddoos(check out my recipes of Nutriballs , Sesame seed laddoos) , jalebis , rice payasam, rabdi , rasagullas... But on birthdays we want cake / I want cake ..😃

This was not the first time I made a cake but the first time I made a cake alongwith its frosting just basic decorating the frosting with a spatula. I did miss out some points while applying the frosting in between the layers ..but thats ok .. finally at the end it made my day like WOW. 

While making this cake I learnt- if you are a beginner in whipping up the frosting then do some armwork - whip it with your hand with a balloon whisk. You could see its texture at all stages . And the final stage when you see the soft peak hmm.. its amazing..

In the end the complete cake feels like an achievement. ✨

Inspired by the recipe of Chocolate spice cake from TasteofHome and of the frosting from passionforbaking , here's the flavour from my kitchen of this Chocolate Spice Cake .

Recipe

Ingredients Used ?

For Cake:

1/3 cup butter softened
1 cup packed brown sugar
2 large eggs
1 apple pureed with 4 tbsp maple syrup
1/2 cup + 3 tbsp brewed coffee room temp

Dry Ingredients-
2 cups flour (1 cup refined flour & 1 cup whole wheat flour)
1/4 cup cocoa
1-1/2 tsp cinnamom powder
1 tsp baking soda
1 tsp ground allspice
1/2 tsp salt
1/4 tsp cloves powder


For Frosting:

2 cups Heavy whipping cream

Chocolate  Spice Sauce -
1/2 cup cocoa powder
80ml (1/2 of 2/3rd cup) brewed coffee
1/2 cup brown sugar
2 tbsp honey + 1 tbsp maple syrup
a pinch of clove powder
a pinch of allspice powder
2 pinch of cinnamom powder


How I made It ?

For Cake:

Sift all the dry ingredients except salt .After siftting add salt and set aside.

Preheat oven to 350 .

Using a flat wooden spoon cream butter and sugar until blended. After its blended switch to a balloon whisk. Whisk in the eggs one at a time. Add the pureed apple and brewed coffee. Mix in the sifted dry ingredients a little at a time . 

Divide this batter in 2 circular baking pans (5n1/2 inch in dia and 2 inch height).

Place in oven and bake for 20 - 25 mins.

When done - test by inserting a knife  or toothpick it should come out clean. Remove from oven and let it cool.

For the Frosting:
Boil all the ingredients for the chocolate spice sauce till it bubbles for a minute. Then remove from heat and let it cool. Then set aside in refrigerator.

Take the cream mix in this chocolate spice sauce and using a balloon whisk and keeping it over an ice bath whip it till you get soft peaks. This process when done by hand took around 25 - 20mins . Remember do not overwhip.

Done with this silky frosting just apply it on the cake the way you like it ...Pipe it ..Just Spread it .. enjoy the delicious cake..
