Pasta with Red Kidney Bean's Sauce

Pasta with red kidney bean's sauce is one healthy and wholesome meal.



I had prepared it for my family . We routinely consume red kidney beans which we call it as rajma with rice. Rajma rice is one of the favourite meals in my family the bowls are just licked clean hmmm.. Check out its recipe here - Rajma Masala.

This one time I prepared rajmah with pasta . Just pressure cooked these red beans with italian herbs and stewed then further while preparing the arabiatta sauce .

Red Beans that I have used are called Kashmiri Rajmah which are smaller in size. I usually soak them overnight then, pressure cook and use them , this is how I have seen beans been cooked since I was a kid. One can use the canned beans too for this recipe. You just would have to skip the pressure cooking part of the beans.

Recipe 

Ingredients Used?

1/2 cup red kidney beans soaked overnight
1tsp + 3tsp dried Italian herbs
1tbsp + 3tbsp chopped garlic
1 cup tomatoes diced(more of you like)
1/2 cup chopped onions
1 green chilly chopped
handful of coriander
1 tsp honey(adjust as per tomatoes)
1 tbsp red chilly powder
black pepper powder (as per taste)
salt
Olive oil

Boiled Pasta of your choice
Parmesan Cheese for serving

How I prepared it?

Pressure cook the beans with 1 tbsp garlic and 1 tsp dried italian herbs and a pinch of carom seeds.

In a sauce pan, heat olive oil, add the remaining garlic and green chillies. once the garlic have slightly browned add onions. Saute it till they are translucent and add tomatoes. Sprinkle some salt saute and cover and cook for around 20mins on a medium to low flame. 

The tomatoes should be cooked to an extent that oil separates from it but still there is some liquid . At this point add 2-3 tbsp of italian herbs, red chilly , 1 tsp honey, black pepper powder, chopped coriander and mix in the boiled rajmah's. saute on a high flame till it starts bubbling . Then add 2 cups water to it and let it boil till you get your required sauce like consistency .
In the end adjust the seasoning and serve it over pasta.

I relished it with spaghetti . Just add some grated parmesan cheese over the pasta then pour over the pasta sauce .. do top it more with some cheese..Enjoy..
